SPANISH FOOD - THE NORTH SOUTH DIVIDE

I've been all over Spain and I am in no doubt that, in general, the food served is better up't north.

The quality of the ingredients, and the skills employed in the kitchen, are the chief reasons for that.

But there are excellent places to eat in southern Spain. I'm not talking about posh nosh at daft prices or international cooking, both of which are so prevalent along the Costa del Crime.

I'm talking about real cooking in the more authentic areas of Spain.
